Cheese Bits
Pumpkin Soup

1 qt goat milk

1 can pumpkin (16 oz)

1/2 t allspice

1/4 t nutmeg

1/4 t pepper

1/2 t salt

1 c cooked rice

2 T butter or margarine

Beat milk into pumpkin in saucepan. Stir in spiced and salt.Bring just to boiling. Stir in rice and butter. Cook and stir 5 to 10 minutes, or until rice is heated through; do not boil. Makes 8 to 10 servings.


HONEYED CHEVON WITH SATAY SAUCE

600 gms cubed kid meat

1 small red capsicum, cut into 5cm pieces

1 small green capsicum, cut into 5cm pieces

24 button mushrooms

Marinade:

2 tblespns honey

2 tblespns light soy sauce

1 tblespn lemon juice

1 tblespn sherry [optional]

Combine marinade ingredients. Marinade cubed kid meat for at least an hour. Drain and reserve marinade. Thread meat onto 8 oiled bamboo skewers alternately with the red and green capsicum and mushrooms. Cook under a pre-heated grill or barbecue grill on high for 5 minutes. Brush with reserved marinade.Reduce heat to medium high and cook for a further 10 minutes, turning occasionally and brushing with marinade until cooked. Serve with satay sauce [see below], accompanied by salad or seasonal vegetables and boiled/steamed Basmati or Jasmine rice.

Satay Sauce:

30 gms butter

1 onion, finely chopped

2 cloves garlic, crushed

2 tblespns crunchy peanut butter

1 teaspn curry powder

1 teaspn light soy sauce

1 teaspn chilli sauce [sweet, mild or hot to taste]

125 mls water

1 tblespn lemon juice

Heat butter in a pan. Fry onion and garlic for 2 minutes. Add curry powder and cook for 1 minute. Add remaining ingredients and simmer uncovered until thickened as desired.

 

Baked Apricots with Goat Cheese and Pistachios

12 ripe apricots cut in half

1 jar Coonridge Organic Black Peppercorn Goat Cheese

1/2 cup of toasted pistachios chopped (not fine)

1/4 cup pecans toasted and chopped

1/4 cup of honey (you pick what kind to use)

dash nutmeg

juice from 2 lemons and 1 orange

 

First thing to do is preheat your oven to 400°F., as this is a simple process once you have your nuts and apricots ready.

Next place the apricots pit side up in a pie plate and pour the lemon/orange over them. Then you actually just layer this dish.

Next drizzle on the honey. Then put the cheese on equally over the apricots and then sprinkle on the nuts and the dash o' nutmeg.

Now bake this dish for 20-30 minutes and remove it from the oven. It is your choice if you want it hot or warm.

I think that it would be great to serve it with some cherries or raspberries for color and they certainly will compliment the dish. Enjoy.

Depending on how hungry your folks are this is good for 3-4 people for dessert. Maybe serve it with a nice dessert wine. Scrumptious, enjoy.
