3 cups sugar 3/4 cup butter or margarine (1 1/2 sticks) 2/3 cup fresh goat milk 1 - 12oz bag semi-sweet chocolate chips 1 - 7 oz jar marshmallow cream 1 tsp vanilla
Combine sugar, butter and milk in large heavy saucepan. Cook over medium heat (continuous stirring) until mixture comes to a full roiling boil (keeps boiling even when you stir it). Cook for 5 minutes (time this carefully) with constant stirring at a full roiling boil. Remove from heat and add chocolate chips. Keep stirring. After chips are melted, add (with stirring) the marshmallow cream and vanilla. Stir until well blended and pour immediately into 9x13 buttered pan. Let stand at room temperature until solid. The key to good fudge is LOTS of stirring and proper timing. Cook it too little and it's gooey, too much and it granulated.
