OLDE WORLD CHEESE - Fresh Goat Milk Logs
'Tis the season for Fresh Goat Milk Logs." The incredible quality and delicious flavor is due to the goats' diet -- dining on lush pastoral grasses and herbs. During spring and early summer the grass is especially young and fresh.
You'll notice it's soft and rich with a creamy, spreadable texture and pleasantly tangy flavor. "Goat cheese is a versatile ingredient," says Cheese Expert Betsy. "It can be added to an omelet, crumbled in a salad or even used as a topping on a pizza."
Betsy's personal favorite way to use goat cheese is to marinate it in balsamic vinegar and olive oil withfresh herbs such as rosemary.

Wine Recommendation:
Goat cheeses can be paired with a wide variety of wines, but one in particular seems to have natural affinity. Sauvignon Blanc and many of the world's finest examples come from a region in France that is also known for its exquisite goat cheeses -- the Loire Valley. Sauvignon Blanc (or Fumé Blanc as it is often referred to in America) is a wine that is high in acidity and balances nicely with tart or tangy foods such as goat cheese. Sauvignon Blanc also has characteristic grassy and herbal aromas which bring out the fresh pasture flavors in softer chevres. Try your favorite Sauvignon Blanc with goat cheese and see for yourself!

We have wanted a milking machine for several years. Every time I built one for us, it was sold before we ever got to use it.
Today I finished our permanently installed pipeline milking system. The glass pipeline is just 10 inches long!!! The milk goes from the pipeline into a 5 gallon glass jar mounted on the wall. Once the jar is full, I shut off the vacuum and the milk drains through an enclosed milk filter and directly into a milk jug. No Lifting of pails. No milk exposed to the air.
The glass jar and filter are mounted over a stainless steel wash sink, so any spills or drips are contained and don't end up on the floor. The same sink serves as a reservoir for the cleaning solutions and it all washes in place with no disassembly necessary. Our system features Surge Solid State electronic pulsation designed to milk goats, a reconditioned Surge vacuum pump and a 1.5K Surge vacuum regulator. We are using the Meltec goat claw. The 6.5" filter assembly is made of food grade clear plastic.
I will be testing a variety of goat (and cow) milking components with our new milking machine and the Surge Triscan milking system analyzer.

I plan to post some pictures of our milking machine on the website in the next couple of weeks. I also plan to post some of our current research on our website then. We are doing research on electronic mastitis (and cell count) detection, grazing vs alfalfa hay, and testing a variety of goat milking claw assemblies.
Systems similar to ours will cost from $2,000 up to $15,000 depending on how many goats (or cows) you want to milk at a time and how much of the equipment is new.
Our glass pipeline is only 10 inches long, designed to milk one or two goats at a time, and is basically for research purposes.
A typical installation might be 20 feet long. These pipeline milking systems are permanently installed. A pipeline milking system offers the benefit of labor saving for dairymen who are milking several head and no longer want to lift heavy milk pails. Hard milking goats or cows can easily be milked with a pipeline. Milk yield and quality may improve.
